My recipe (which is based on the Taste.com recipe)
Tomato & Capsicum Soup
2 tbs oil1 brown onion2 tsp garlic (one or two cloves)500g tomato (7 or 8 tomatos)1 capsicum1 small carrot1 hunk of sweet potato OR 1 potato2 cups stock1 tbs balsamic vinegar OR 1 tsp sugar & 1 tbs tomato paste
Season to taste; a rough guide:1 tsp cumin1 tsp cayenne pepper1 tsp chilli1 tsp corianderbasil
Optional Extraslentils
Soften or brown onion and garlic in oil.
Add chopped tomato, capsicum, grated carrot & potato.
Once tomatoes have softened add stock and balsamic.
Cover and bring to boil before reducing heat to low simmer for 15-20 minutes.
If using chopped potato, then simmer until potato is tender.
Remove from heat, cool for 5 minutes before blending (in small batches, if easier) until smooth.
Return to heat for 3-4 minutes and season to taste, ready for serving.
